Low MPG's

I believe if you press the INFO button in the instrument cluster repeatedly, you will get to a setting for AVG MPG. When you reach that, press the RESET button to set it back to 0. Then the calculations will be accurate till the next time you fuel up.

I did this. I'm averaging 15mpg now. That's way better lol

How many miles on your SHO, and did you check to see if the HPFP cover was in place, BTW?

Wheel bearings can create drag. Any whine/growl, more prominent turning in one direction vs another?

Old/incorrect fluids can also create drag. Engine oil, trans fluid, PTU fluid, RDU fluid.

Dragging brakes will also greatly cut into mpg. Does it seem at any point during acceleration that it takes more pedal than it should?

It think it's my driving style honestly. The car points straight under acceleration and the bearings seem fine. I'm thinking I could use a trans fluid change because when the car isn't 100% warmed up, downshifts are strong. And what does the fuel pump cover look like?

A black cylindrical plastic/foam piece sitting close to the middle of the "front" valve cover. You have to take the appearance cover off to see it.
