i am in the process of switching the intake manifold, plugs,wires, and valve covers from my 91 to my newly accquired 89 and was wondering if i should replace the valve cover gasket?

Well, if you're in there anyway you might as well.

The Fel-Pro set is $72 at AutoZone and includes the 6 spark plug tube seals.

That is the Fel-Pro VS50378R set and you may be able to special order it through AutoZone, but if not, you can order it through AutoZone.com. Through that site, you will have to look it up for a 3.0L SHO (I can see it for my 1991) in the ENGINE EXTERNAL -> VALVE COVER GASKET location. for some reason they don't have it listed for the 3.2L or later year SHOs.

If you are going do to intake manifold too, you might want to look into replacing those gaskets as well. You can buy a kit form SHOnut for $140 which includes all the upper gaskets, inlcuding the valve cover and spark plugs. Just a thought.
