This may sound strange but when I open my car door it seems to kind of want to close on its own. Does anyone else know what I'm talking about or how to fix it? Is this normal on these cars?

in some cases, you can pull back the spring and rotate the roller slightly so that the spring runs on a different part of the roller, and this adds enough tension to the spring that it will hold the door open. in other cases, the spring needs to be changed

The doors are the same as any other taurus, so any taurus hinge will work. Whether it's the right color, though...

this is kind of a pain but I do find it convenient that I can just walk away from the car and it well close automatically.

You should get one of those screen door prop rod things with the tab you can lock in place to keep it open!
