I have the twin Aeroforce gauges. I really like them, but unfortunately, the Aeroforce forum has been down since I bought them. Below is a list of the parameters I have.

I typically watch LTFT, Knock Retard, Boost and Equivalence Ratios (commanded and actual lambdas). What do you watch and why?

INTAKE AIR - Intake Air Temperature
IAT 2 – Intake Air Temp 2 (typically post intercooler)
IAT 2 VOLTS – raw voltage signal from IAT 2 sensor
KNOCK RETARD
LEARNED KNK COR – Learned knock correction
BST AIR VLT – Boost air voltage – undetermined at this time
CHRG AIR T – Charge Air Cooler Temperature.
CHRG AIR V – Charge Air Cooler sensor raw voltage
AMBIENT AIR – Engine compartment air temp (limited support)
COOLANT
CAT TEMP B1S1 – Calculated EGT bank 1
CAT TEMP B2S1 – Calculated EGT bank 2
RPM
BOOST inHg/PSI
BOOST DSRD – Commanded boost pressure – unverified
MAP KPA
MPH
THROTTLE PCT. – tps not pedal
IGNITION ADV.
SHORT TRIM B1 – short term fuel trim bank 1
SHORT TRIM B2 – short term fuel trim bank 2
LONG TRIM B1 – long term fuel trim bank 1
LONG TRIM B2 – long term fuel trim bank 2

ENGINE LOAD
FUEL STATUS (open or closed loop)
RAIL PRESS DI – fuel pressure at the rail #1
FUEL RAIL DSRD

RUN TIME – Engine run time. Resets after each ignition cycle
CMD EQ RAT – commanded equivalency ratio
B1S1 EQ RAT – actual equiv. ratio bank 1 (A/F ratio)
B2S1 EQ RAT – actual equiv. ratio bank 2 (A/F ratio)

CMD AFR (eq ratio x 14.2)
B1S1 AFR (eq ratio x 14.2)
B2S1 AFR (eq ratio x 14.2)
BAROMETER
BATTERY
TCC SLIP 4 – torque converter slip – Taurus SHO and others
HEAD TEMP 2 – cylinder head temp – Eco boost and others
TRANS TEMP 3 – trans oil temp 3 – Taurus SHO
Knock Sen 1

The Knock Retard (KR) function will work on a stock tune. Often, aftermarket tuners will set the knock retard from "Global" to "Per Cylinder". In Per Cylinder mode, the KR will no longer display.

I aim for zero knock retard, so I didn't see a benefit to per cylinder KR. I set it back to Global, so I could use the Aeroforce gauge to monitor KR. I personally believe monitoring KR is the most important function.
