does anyone know where I can find seat covers that would fit an 89 SHO or how much it would cost to recover them?

No cheap way out for this one I'm afraid. Getting them recovered, especially if they are all leather, is very expensive. Unfortunately the one sized generic seat covers don't fit properly either. The only good fitting ones I am aware of are very nice, hand made, and expensive from wetokole.com. You can get the Ford logo and/or the SHO logo embroidered on them.

I've currently got the wetokole.com set on my 92 SHO that I bought recently. Like luigisho said, they're not cheap. They were $225 for the set. However they are custom made and fit like a glove. They come with headrest covers also but mine were gray like the middle of the seat and I wanted the black to contrast so I didn't install them.

Here is a pic of them:

Roy, those are really nice. Are the headrests all gray or a mix of the gray and black? Could you order them w/black headrests? After my suspension is up to ***** I'm getting a set. Do they tie together? How is access to the power stuff on the seat? Just really curious. :D

My headrest covers are all gray but I'm sure you could order them black. Access to the lumbar controls is not inhibited at all. The covers are made to allow access to them. The headrest covers and back are fastened with velcro while the seat cover has three straps underneath.

I will take some other pics showing the controls, velcro, and straps tonight when I get back home then post them.

Here they are:
