There originally was an emissions label on the black plastic cover over the radiator that had the vaccuum diagram on it. If it is still available, check it for the exact layout of the vaccuum circuit.
You can plug the port on the intake manifole with a plastic cap. They are available from most auto parts stores. I've seen them in the HELP! section at Autozone.
As I remember, the line goes from the intake to the CANP solenoid valve (small restrictor inline)then to the canister. From the canister, there should be two lines that go toward the rear of the car. One should go to the top of the fuel tank, the other should end either by one of the rear wheels or at the rear bumper (depends on whether a specific TSB (97-22-2) was applied.
If I was removing the canister, I'd just disconnect and plug the lines at the canister.
