Do I need to replace the knock sensor (and perhaps the fuel pressure regulator) as routine maintenance when doing the valve adjustment? Do these sensors deteriorate over time? How long do they usually last?

Replace only if they have been demonstrated to be defective (unless you really want to replace them for piece of mind).

The only time I really worry about the knock sensor (preventatively anyway) is when I'm removing the fuel rail to replace an injector, or building an engine outside the car, etc, since I'm staring it in the face. Otherwise, nope.
