I consulted with my dad about doing a 60k (he spent about 10 years working for a Chevy dealership), and he said it might be a good idea to check the valves themselves as well. I'm not what you would call a master mechanic, but this entails pulling the heads, right?

Most likely I won't be doing it until the summer, when I have enough time and money, but if we end up going this far, would it be worth it to just take the motor/tranny out of the car and work on it that way? Seems like it would to me, but I don't know what's involved in pulling an engine.

Well I personally see no need for this unless you have a known problem. You could simply perform a leakdown & compression check and this will tell you if your rings are good and your valves are forming a good seal. Much simpler than pulling the heads is to rent? a "scope" which I've seen some mechanics use and you remove plug, insert scope in hole, and check out the valve heads. Bonus is you check out piston heads also. You can then perform your needed arthroscopy on your left knee which has shredded cartilage!!!
