After lots of research, and two false starts with "other than TireRack" online tire sources, my SHO is riding on some max performance/UHP summer only tires in 215/60R16 95V.
The tires are Goodyear EfficientGrip Performance, with a 340 tread rating. Your local Goodyear dealer will NOT have them. They come in either H or V speed rating. Finding the V speed rating, which will have a stiffer sidewall, was a bit of a challenge, Priority Tire tried 3 times and always shipped H rated tires. Reaching them was a challenge to say the least. Simple Tire also advertised the V rated tire, after one round with them they admitted, it was miss listed, their customer service was better. Finally got a set from a California based ebay seller, complete with 2023 manufacturing date codes.
Anyhow, the tires are quite grippy, and ride very nice. They remind me if the Bridgestone S-02's I used to run in my prior SHO on 16x7.5 and 16x8 inch wheels. They are easy to take up and slightly past the limit, turn in is pretty sharp for what they are.
There is an EfficientGrip Performance 2 in this size, with a 99W speed rating sold in Europe, not sure if they will be available here.
Recognize that some run 225/50 or 225/55's on slicers, but because they are only 6 inches wide one gives up quite a bit of steering response, and grip due to tire curvature.
