What needs to come out in order to access the old PS Pump, where exactly is it, and what should someone look for while doing this job? Has anyone done this done willing to post a write up in this thread on how to do it? Thanks!!

But is that how to do it on an MTX or ATX, or both?

It should not matter. Mine is an ATX and the write up is real close to the same way I did it. The only differance between the ATX and MTX that I a aware of is the drive belts. My ATX has only one serpentine belt. Here is a pic.

For a qualified mechanic, how long should this job take? Including the pressure hose?

That is a really go ???. It really depends on how familiar with the motor the mechanic is. If you have never worked on a SHO I would have to say 4-6 hours. If they are familiar with the SHO maybe 2-3 hours. It is not an easy item to get to. I did mine with the front 60k so it was a bit easier.
