I put a 170F t-stat on my V8 but found out that if you don't turn the fans on that it does not do anygood as thetemp will still go up to ~190F eventually. I installed an adjustable fan controller from Summit Racing. I can set the fan to come on at 80F on up. I also hooked up a small LED so I can tell when the fans are on.
Currently the fans are set to come on at ~170F. I used Mac's fan switch directions on V8SHO.com, http://www.v8sho.com/SHO/Cooling_Fan_Override_Switch.htm to use the OEM relays to start the fans on low. They will still kick up on high when the A/C is on. I'm trying to find a source of the 35mph signal to keep them from coming on at speeds above that.
